Crayfish and Sorrel Salad

Simple Crayfish & Sorrel Salad | Healthy Salad Recipes - Flora ProActiv

A soft fluffy crayfish meat and salad fusion with delectable sorrel flavours. This interesting dish is great as a filling lunch or healthy dinner.

  • 1 tbsp olive oil
  • 400g crayfish
  • 2 cloves garlic, crushed
  • 2.5cm piece fresh root ginger, grated
  • 250g spinach
  • 100g sorrel
  • 25g Flora Pro.Activ Buttery
  • 200ml tomato juice
  • 1 lime, juiced
  • 1 tsp fresh red chilli, finely grated
  • 1/2 tbsp finely chopped mint


  1. Heat the oil and sauté the fish, garlic and root ginger for 3 to 4 minutes.
  2. Meanwhile place the spinach in a large saucepan with 1 to 2 tablespoons water, cover and cook for 2 to 3 minutes, shaking the pan from time to time until the spinach has wilted. Add the sorrel with the Flora ProActiv spread and stir through.
  3. Mix all the ingredients for the sauce in a saucepan and heat through gently.
  4. Serve the crayfish on a bed of spinach and sorrel, topped with the sauce.
